Before ordering want to sort out cabling

The cabinet serving our house has just had fibre enabled and I am looking to upgrade.  Before I do I would like to get some advice on cabling.

 

In my room (room 2) I have all my devices wired and would like them to stay that way.  Therefore I have been looking into ways in which to have the fibre connected router and/or modem in my room.

 

Currently our setup is as follows, a cable runs from the master socket to an extension in one bedroom, then from that extension to another in the second bedroom then to an "ADSL" extension with an RJ11 faceplate.  Hopefully this diagram will explain this better.

It seems like the best option for us would be to run cable (cat 5e I believe) from the master socket to the second bedroom and have everything in there.  However instead of running new cable I was wondering if the existing cabling that runs between the unused extensions could be used.  Could this be removed from the phone extensions and joined to form one cable.  Would this work or would it cause slow connection speed / connection problems?
