Router: Huawei HG633

At the moment I am having to restart my router daily in order to get a good enough connection to play online on an Xbox One and to try and keep a general stable connection.
Xbox is connected via Ethernet to HG633, which is connected to a brand new VDSL2+ master socket.
My latency usually sits at around 15ms, however every 5 minutes or so, it will sky rocket above 400 for a minute or two, then return to 15~ish. Download speed sits at around 25MB which I am very happy with, however the upload speed is only around 1.95MB, which doesn't sound like fibre speed to me.
Restarting the router sometimes fixes the issue for a few hours, however it always returns.
The connection itself just seems unstable and I have tried everything I can find on these forums to try and fix it, but nothing seems to work and I am still getting these problems.
I do not have another router to test my connection with.
Any help or guidance would be appreciated
